Molecular Gastronomy - What is it?
Molecular gastronomy is a scientific discipline involving the study of physical and chemical processes that occur in cooking. It investigates the mechanisms behind the transformation of ingredients in cooking, attempts to explain them, and investigates the social, artistic and technical components of culinary and gastronomic phenomena in general.
The term was coined in 1988 by Hungarian physicist Nicholas Kurti and French chemist Hervé This, although atomic physicist Nicholas Kurti debuted the principle in London in 1969.

IFSTI Seminar Food Additives & Link with Hyperactivity in Children

IFSTI presents Prof Stevenson, the lead researcher on the recent UK study linking certain food additives and hyperactivity in children. In the past there has been a considerable amount of anecdotal evidence on the effects of certain food additives on children’s behaviour but this is the first scientific study that has demonstrated these effects.
Currently this study is being reviewed by the European Food Safety Authority to assist Members States and the Commission in deciding what action is necessary to protect consumers.
This seminar will -
present the findings of this recent study,
present an update on the drafting of the European food additives legislation and the ongoing re-evaluation of the safety of all permitted food additives,
explore the effects of these and other issues on the food ingredients industry.
